Lots of people like fat bikes for winter riding here in CO. I personally didn't like the couple that I've demo'd. It feels like you're riding a bike with beach balls for tires, not to mention it didn't actually do very well in the snow.

Some of those same people swear that fat bikes are fun for the regular trails out here, but I just think they're kind of dumb. The only purpose they would serve me would be as a mountain hunting bike since it is basically a monster truck that can get up/over a lot. Especially if it has a pedal assist.
