I like the general maintenance day thing. You can cover almost 99% of what your average moto rider needs to do in a days time. Chain/sprocket, fluids, tire removal, spark plugs, valve check, pads, basic suspension setup (maybe), stuff like that.

+1
"Remember you may love your bike but your bike doesn't love you and that bitch will kill you the first time you do her wrong."
Not sure if anyone posted it yet but I would sit in on a cylinder head class....Inspection/overhaul/upgrade (Port, polish, valve lap, seal replacement ect.)
As well as Transmission overhaul/upgrade (gear undercutting ect....race shite)
Done some cylinder head work but I like learning new things and I dont have experience with port/polish work yet.
Valve check - I can bring the CRF150Rb. It needs the maintenance anyway.
Valves/Cam/Maybe install a different cam - Perhaps something to try on the WR450? Just a thought. I know very little about the upper end of a four stroke, so this would be interesting.
Carbs - I think a lot of folks are confused about carbs. How to tune them, differences between 2/4 stroke carbs, jetting, pilot circuits, lean vs rich jetting. Having gone through this learning curve on my own I know there is a ton of information out there. But it takes digging to really understand it.
Tires - How to change tires. Dirtbike vs Streetbike. I do dirtbike tires all the time. But I'd rather not do street tires so I don't damage rims. (Like the magnesium ones on my ducati.)
Maybe a basic maintenance class. 2-3 hours, oil changes, chain adjustment, tire pressures, basic suspension setup - sag & clickers explained, setting bike up for rider comfort, simple chassis geometry explained.
Trees - how not to hit them.
Note to self: Do NOT cross the path of a BlacKat!!!
^^^ Huge +1 on changing tires. I don't care about scratching my RMZ wheels but I'm definitely not trying to customize my ZX-10 wheels. I know its not hard but seeing it done and being able to ask questions would make it much easier.

Both Todd's 250 XCW-F and Donovan's 150R need valve work, too, and I already offered the 250 to Chris for a demo bike.
