Don't forget a

flashlight (night prior or just looking into dark spots on bike)
Spare batteries for camera and flashlight
baby wipes (for greasy hands)
extension cords (50' to reach power if avail/rented)
electric lights (for early morning starts and night-prior prep)
Windex for cleaning helmets/lenses
Anti-fog spray for fogging helmets
Spare towel for hot days (drenching sweat)
bungee cords for tying down canopy/assorted stuff
Advil / ibuprofen (old guys)
ice cold beer for the after party! (:

If I don't bring JTB or Cookiebars I get in trouble, so I've got both of those on my list as well.

Honestly, because I have an enclosed trailer I have all of the large stuff already in the trailer (stuff that someone can't steal because it's just too much of a pain in the rear) and the rest fits into bins. When I head out the door I say the following "Keys, Boots, Gloves, Back protector, Leathers, Helmet, Bike". I figure if I forget something I'll still be able to ride when I arrive even if I forget everything else or if something was taken out of a bin.

You may want to add
  • Food / Drinks / Water
  • Spare Cash

to your list as well.
