Magic-Rat's Apple Pie - November 5, 2010, 04:35 PM

Well, the other thread talks about "car bombs", but a long time ago in the deep forests of the Adirondacks in upstate New York, the shiner's all got together in the Fall ... when the cider was fresh squeezed and the corn was all picked ...

That harvest stock made for a lot of fresh shine ... and apple cider ...

Too harsh and un-aged to sip from the jar, you had to mix the "new" shine with something ... and well, that's when they discovered "Apple Pie".

It really is strong ... and it tastes just like ... and I mean just like ... apple pie.

So, follow these instructions closely ... and remember who told ya'.

All your friends will want more ... every time. Guaranteed ...

Get:

- Gallon of fresh Fall apple cider (the best is non-pasteurized from a farmers market ... but you don't have to have that)

- Gallon of Apple Juice (this is from the grocery store ... plain old juice, not cran-apple or any such "mix-ups")

- 3 cups white Sugar

- 8 Cinnamon sticks (not 7 ... and not 9)

Now:

- Put it all in a big country pot .... stir it real good ... and bring to a boil

- Soon as it boils ... turn off the fire and let it cool completely to room temperature. If you put the booze in when it's above 173-193 degrees (still hot), it will all boil off because alcohol boils at that temperature before the water ... so let it cool all the way.

- Fish out all 8 cinnamon sticks and throw them away

- Add 1 QT of 100 proof nuetral spirit shine ... or Vodka if you can't get the real thing ...

- Now store it in yer fridge' and let it get cold.

- If you want to upgrade your "apple pie" to "apple pie hook-up elixir", then keep adding shine/vodka until you can taste it. You can put in a TON ... and I mean a TON of shine/vodka in this ... and still not taste it. You can make it a really sneaky drink ... more than any long island tea or fancy city drink that you have ever had ... and that's where it's legacy comes in.

It tastes like Apple Pie ... and well ... you can write your own story from here on out.

There will be sediment of apples and such on the bottom of the jar, glass, container you put it in ... and it will be cloudy. Don't worry about that. All good to drink.

... and you can drink it warm, too. Nice drink on the side of a ski-slope heated up like that.

P.S. - I almost forgot ... it's only good for about 2-3 weeks after you make it. Like milk ... the cider goes bad about then ... starts to turn sour. So, don't make it till you need it.

Enjoy.

... and be careful ... cause it WILL sneak up on you.

Any recommendations in Vodka, since us city folk don't have a shine distributor. Triple distilled should suffice I assume?

Magic Rat -
You should do a post one day with all your recipes.

“Any man who tries to be good all the time is bound to come to ruin among the great number who are not good. Hence a Prince who wants to keep his authority must learn how not to be good, and use that knowledge, or refrain from using it, as necessity requires”.

When I was living in Rochester... a friend of mine from Syracuse set me up with this stuff... or something very similar.

And yes... it did sneak up on me.
