How to make Tapenade at home. - March 31, 2013, 12:42 PM

I first tried this stuff at a restaurant called Sabores in DC. I instantly fell in love with it. It takes about 20 minutes to make and it's great for little get-togethers. Fresh bread is a MUST for this recipe. This is the biggest batch I've made, but the same rules apply.

Here's what you need for a smaller batch:
1 Cup of Olives (pitted with Pimento).
1/3 Cup of Jalapenos.
1/2 Cup of Extra Virgin Olive Oil
2 TBS of Balsamic Vinegar.


Drain the Olives:


If you're making a big batch, make sure you only cut one cup at a time. Any more than that will make the olives cut size inconsistent.


Here's the size that you want. Not too minced, but good and chopped:


Make sure you cut up the Jalepenos a bit before throwing them in to the blender. Otherwise they can turn to mush:



Throw it all in a big bowl with the oil and vinegar and start mixin'. Do not use a machine for mixing, it may turn your mix to mush.



You can use the old Olive jars to keep the extra Tapenade. Enjoy!
